Ideal as an aperitif on its own, but will carry nicely with seafood and white meats.\u003c\/p\u003e\n\u003cp\u003eA single vineyard source from Paul Tietjens renown vineyard with 20 year old Mendoza clone Chardonnay.\u003c\/p\u003e\n\u003cp\u003eWhen the grapes reached the prescribed flavour profile they were machine harvested without additions in the field to allow the tannins to oxidise. On arrival the grapes were pressed off immediately and settled. Once clear the juice was inoculated with a pure yeast strain and cool fermented to dryness. When dry the wine underwent a full malolactic fermentation to add complexity and mouth feel.
