The result is fruit with depth, balance and fresh varietal character.\u003c\/p\u003e\n\u003cp\u003eAfter selective harvesting, fruit is taken straight to the winery and transferred to red fermentation tanks. A short cold soak helps build colour and mouthfeel, followed by a hot ferment to maximise flavour.
