The Riesling vines are among the region’s oldest, having been planted in the early 1980s, and have been managed according to organic principles for more than a decade. The vineyard soils are composed of free-draining greywacke gravels with some sandy seams. These naturally low-fertility soils restrict vine vigour, resulting in lower yields and greater concentration of flavour in the fruit. The vines are trained using either a two-cane or two-cordon vertical Shoot Positioning (VSP) system. Fruit for this wine was selectively hand harvested from two small parcels within the “Front Block” on the 1 April at between 20.3° -21.0 Brix.\u003c\/p\u003e\n\u003cp\u003eA mild winter lead into a warmer than average and relatively settled spring with timely rainfall which provided excellent conditions for vegetative growth. No frost events were recorded so the vineyards got off to a great start. December provided ideal conditionings for flowering and therefore, high yields were set set across all varieties. January was cooler at which point harvest dates felt a long way off. February and March saw more settled conditions and as predicted the bulk of our fruit was picked in early April which a week later than in recent years. Despite some unusually humid conditions and the odd rain event we were able to harvest fruit in great condition whilst meeting flavour and ripeness parameters.\u003c\/p\u003e\n\u003cp\u003eThe “Select” is inspired by the German Spätlese-style Riesling. We feel it is a wine that most clearly reflects the unique character of our vineyard site.  Both the fruit source and winemaking approach have remained unchanged since we first began producing it more than 20 years ago. Carefully selected golden-hued bunches were harvested by hand and gently whole-bunch pressed. The juice was fermented at cool temperatures in stainless steel tanks using a neutral yeast strain to preserve site expression and vineyard transparency. Fermentation was stopped once the desired balance between sweetness and acidity was achieved. The wine then spent five months on light lees before being lightly fined, filtered, and bottled in October 2025.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eFood Pairing: Great as an aperitif, or match with spicy vibrant Asian cuisine.
