It tastes plush and oily with concentrated sweet fruit but finishes dry and grainy. There is a late, pithy and quite mineral acidity which runs right through the palate, adding citrus and sweet herb flavours as well as some tension. This very perfumed, fat and textural, full-bodied white will be versatile with richer food. Soils here are of the old riverbed type; fist sized stones composed of greywacke (a hard, dark type of sandstone streaked with quartz and feldspar), mixed alluvial, gravel and silt.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAll varieties were hand-picked on the same day. The fruit was destemmed and remained on skins for 12 hours before pressing. The resulting juice was transferred to a mixture of seasoned oak puncheons and stainless-steel barrels where it fermented spontaneously.
