Now under the supervision of oenologist Xavier Roger with wines tailor-made to appeal to Kiwi tastes through local importer Steve Bennett, Master of Wine.\u003c\/p\u003e\n\u003cp\u003eVermentino is a mid-ripening, aromatic, maritime grape variety, grown throughout the Mediterranean where it is well-suited to hot, sunny and dry climatic conditions as it retains freshness. After a gentle pneumatic pressing, with extraction of the premium free-run juices only, the juice is clarified before being fermented. Cool temperature-controlled fermentation between 16°C to 18°C occurs in stainless steel tanks to preserve delicacy. Malolactic fermentation is stopped to preserve the freshness of the wine.
