Lower than average yields and a significantly earlier harvest allowed for good varietal flavour development and balanced acid.\u003c\/p\u003e\n\u003cp\u003eVineyards are carefully monitored to be able to harvest the fruit at optimum flavour ripeness and balanced acidity. Harvest is carried out in the cool of the morning. Fruit is then carefully destemmed into Potters and fermented at 25-30°C over 7-8 days.
