Rust red earth or terra rossa is a feature of this region, cool nights and long mild growing season makes for distinctive and recognisable Cabernet Sauvignon.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tGrapes are full and partial destemmed, crushed into modern temperature controlled stainless steel tanks. Fermented on skins with the cap managed daily. The wines are assessed for colour and tannin evolution prior to pressing the wine off the skins. The wine undergoes full malolactic fermentation to temper the acid profile.
