In 2024 the vines were 18 years old, and all cane pruned, this allows us to keep an open canopy and moderate crop load.\u003c\/p\u003e\n\u003cp\u003eViognier has the narrowest of windows to harvest the fruit at optimal flavour, sugar and acidity. The best flavours come right at the end of ripening and quickly dissipate if left too long. Viognier requires daily and sometimes twice daily tasting and analysis near to harvest. The grapes were carefully hand harvested and whole bunch pressed for gentle extraction of aroma and flavour from the grape skin.
