The soft tannin and bright fruit profile are typical of the Bridge Pa district.\u003c\/p\u003e\n\u003cp\u003eFruit for this wine was sourced from our estate vineyard. We use a variety of clones grafted on 3309 and 101-14 rootstocks. All vines are cane pruned with bud reduction, shoot thinning and second set removal performed as required. Bunch thinning takes place as needed. Fruit selection is based on ripeness levels and flavour.\u003c\/p\u003e\n\u003cp\u003eThe individual varieties were harvested separately at optimal ripeness, at the point where flavour has developed, and tannin structures have softened but still with enough natural acidity to give freshness. After destemming, the grapes were fermented separately with warm temperatures and regular pump overs to extract colour and flavour. Extended maceration on skins post ferment adds depth and complexity to both flavour and structure.
