The attack is full and rich, with a lot of volume, evolving on a lemony freshness and long and lively exotic fruit finish.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe grapes are hand picked with care to avoid any bruising. They then undergo pneumatic pressing. Only the juice that runs naturally from the grapes is used, which is left to clarify for 18 to 24 hours. The wine is left to mature in vats for nine months on the lees.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tMarc Brédif is owned and operated by the Baron de Ladoucette. The wines are made in the state-of-the art winery within the landmark Château du Nozet and are considered to be some of the finest examples of their type. Grown on the lower slopes along the Loire Valley in Vouvray and Vernou-sur-Brenne, the grapes for the Marc Brédif Vouvray enjoy northern\/southern exposure. The vineyards have soils of mainly chalk clay, with some parcels having flint clay soils. The vineyards are 25-30 years old on average. These gnared, old vines never yield a big crop (35hL\/Ha or St\/Ha), but because of this, the berries and bunches are small and the fruit is wonderfull concentrated. The 2016 vintage was smaller and the winemakers had to harvest faster then previous years. They experienced a dry winter but sufficient cold units had been accumulated for the full breaking of dormancy. Above average warmer weather during August continued throughout Spring\/Summer and casued the grapes to mature early so the harvest kicked off one to two weeks earlier than usual.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe grapes were whole bunch pressed and the free-run juice settled for two days before being poured into barrel. Alcoholic fermentation was carried out entirely in old oak barrel (using only natural ambient yeast) for 8-10 weeks under cool conditions (fermentation peaking at about 18 degrees). Malolactic fermentation was inhibited by the cold. The wine was kept on its primary lees throughout maturation, racked out of barrel after about 9 months, assembed and then settled for a month.
