Our Chardonnay hails from Monterey County. Part of the fruit comes from a vineyard in the Gabilan mountain range where sandy loam soils result in concentrated fruit. The other half comes from an Arroyo Seco vineyard that produces grapes with a high level of natural acidity. When these two wines are blended together, we create a Chardonnay with optimal balance. To further its complexity, the wine rests on its lees until such time as part of the wine is placed into barrels while the remainder is finished in stainless steel. Each site adds a unique character to the wines flavour.

The grapes are harvested in mid-April. The fruit is then left to cold soak for 5-7 days in a stainless-steel fermenter and during this time, indigenous fermentation is encouraged to start. At the height of ferment the juice and skins are gently plunged to assist tannin and colour extraction. After fermentation is completed, the young wine soaks on skins for a further 10-14 days to allow the tannins to soften. This process also reduces the need to fine their wines. The wine is tasted daily to follow the tannin development until the wine has reached its potential. It is then drained off the skins which are gently pressed to extract free-run wine. They then mature only the free-run wine in French oak barriques for another 10 months before it’s blended and bottled as their Central Otago Reserve Pinot Noir.

 Dry style

 Lemon curd

 Spiced pear

 Supple texture

Pear, red apple and attractive floral aromas are matched with lemon curd and hints of spice. The silver lining of lower crop levels was the fruit quality, overtly aromatic and multi-layered flavour levels with great balance and structure as well. A cool start to the growing season coincided with an early budburst and some very cool conditions throughout September. The impact on bud burst was a reduced number of bunches on the vine. Cool weather and lower than average rainfall in December also contributed to smaller berry sizes. Warm conditions and lower than average rainfall in February and March progressed the ripening of the lower yielding vines at a faster rate than previous years. This led to a very good growing season; good flowering, nice even bunches and early ripening. Picking commenced on the 26th March and finished on the 7th April, about 10 days earlier than 2017.

All of their Chardonnay was handpicked in different batches depending on levels of ripeness. It was then gently whole bunch pressed which resulted in delicate fruit-driven aromas and good palate weight, while minimizing the extraction of undesirable phenolics. Once pressed, the juice settled for 12-24 hours before the clear juice was put (50/50 split) into tank and barrel (new and neutral oak) for fermentation. About half of the barrels went through the malolactic fermentation to soften the acid balance and broaden the palate. Both barrel and tank components were aged on lees for 10 months, adding textural elements to the wine. The end result is a wine with fine stone fruit character, creaminess of texture and length.

Food Pairing: Pair our Mt.
