This resulted in later harvest dates, accentuated by the cool and wet ripening months; conditions not experienced in Western Australia for more than ten years. These conditions, coupled with the absence of heat events, produced highly aromatic reds with pristine natural acidity.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tHarvest was done during the coolest part of the night. The cool fruit was then gently transferred to a fermenter where it was cold soaked to contribute unique aromatics, intense stable colour and a soft texture in the end wine. At the completion of fermentation, each barrel was pressed separately to tank before being racked off yeast lees to barrel or tank for maturation. Flowering and fruit set were also exceptional giving solid yields across WA. Some significant rain events in December set up the vineyard with good levels of ground water to see them through ripening. A relatively cool summer has allowed for slow, steady ripening of whites, retaining high levels of natural acidity. A selection of shiraz was sourced from eight small parcels across the estate vineyards including two additional clones of shiraz (clones 470 and 174) that complement the established clone that has been planted since the original vines in 1988. The use of whole bunch fermentation (4.5%) and the inclusion of additional varietals planted progressively over the past 20 years have been precisely blended give the wine complexity and uniqueness. All vineyards are managed under certified organic principals (certified organic 2010), a practice we feel is important for reflecting the uniqueness of the site through a purity of fruit.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2020 was an outstanding shiraz vintage combining dry yet mild conditions that resulted in wonderful fruit concentration and aromatics. A dry winter and spring resulted in reduced yields however quality was exceptional with ideal growing conditions. Whilst dry the summer cooled considerably in early March slowing ripening of the Shiraz and providing fruit clarity and depth of flavour.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe complexity of this wine no doubt comes from the three clones of shiraz now grown in the estates certified organic vineyards and the eight small parcels used for this shiraz ((making up 90.1% of the wine) with 4.5% of this being whole bunch fermented), supported by the use of small additions of Touriga Nacional (4.4%), Mourvèdre (4.4%), and Viognier (1.1%).\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThis wine was fermented as long and slowly as possible, at temperatures not exceeding 28C in open fermentation tanks that allowed the cap to be worked by gentle plunging. The use of whole bunch fermentation (5%) from our Geneva Double Curtain block and the inclusion of additional varietals planted progressively over the past 20 years have been precisely blended give the wine complexity and uniqueness.\u003c\/p\u003e\n\u003cp\u003e2021 was really positive for Shiraz. Everything looked good, the crop was a healthy size and everything ripened beautifully. We picked in April, pretty late but the fruit was aromatically charged with lots of spice and pepper. Considerable dedication to viticulture has in turn allowed us to make the Shiraz we are making today.\u003c\/p\u003e\n\u003cp\u003eThis wine was fermented as long and slowly as possible, at temperatures not exceeding 28C in open fermentation tanks that allowed the cap to be worked by gentle plunging. Twelve different parcels fermented separately from different clones on different parts of the vineyard, some co fermented with small portions of Viognier and Marsanne, some with different levels of hand-picked whole bunches. An extended maceration period followed completion of the ferments to allow optimal texture and flavour extraction.
