Peak temperature was 32°C. Total skin contact was 11 days before the free run wine was taken to seasoned French oak barrels for 7 months. No additives. No fining. The grapes were harvested and gently pressed before the juice was immediately clarified. These vineyards are situated on a raised ridge of stony soil outside Masterton Wairarapa. The free draining soils and cool dry climate are ideal for ripening high quality Pinot Noir. In the vineyard we target certain blocks for Rose based on their ability to produce lifted fruit characters and retain fresh acidity. This wine is predominantly made from clone 10\/5 and we leave a little bit more leaf on the fruit zone to save fine aromatics.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tWinemakers harvested the fruit in a range of flavor spectrums to enhance the palette of vibrant fruit characters. Sugar levels at an optimum 25° Brix. The intact bunches were sorted and placed into an open top fermenter, where they were gently pigéaged to encourage the native yeasts from the vineyard to begin fermentation. Throughout fermentation, the temperatures were regularly monitored, and minimal punch downs utilized to ensure a clean ferment. After 3 weeks on skins, the free run was placed on 2nd fill French oak where it stayed for 14 months. No additives, no fining, no filtration.
