The season was very long with fruit slow to ripen and although the urge just to pick it all was there, we had to bide our time until we had optimal flavours and ripeness. Once I made the decision to pick the grapes came in at an orderly pace, although increased yields due to the rain in spring made the juggling game in the winery even more challenging, with tank space at a premium. We made it through our marathon 2017 vintage and are thrilled with the exceptional quality including a number of really extraordinary parcels.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe grapes for this Shiraz were picked and crushed during the cool of night, thus ensuring the retention of varietal character, while modern winemaking techniques were employed throughout. Fermentation took place in sweeping arm red fermenters, giving the wine a denser, richer colour and allowing for gentle flavour extraction. Softer tannins are also a result of this process. Careful attention was also paid to the oak selection for the Shiraz. This wine was aged on American oak for approximately 8 months, giving the wine a noticeable, but not an excessive oak influence. Once grapes arrived at winery, the fruit was crushed and destemmed to a mixture of static and cinematic vessels. Wines were pressed off skins at 2 beaume and part of wine transferred to oak for fermentation to complete. Once wine was dry in oak and tank, each parcel was racked off gross lees back to same oak\/vessels and allowed to go through malolactic fermentation. The individual components were tasted, and a blend was determined. Once blended, 20% of the wine went into barrels for 8 months. The barrels used are all 2-year-old American Hogsheads. The remaining 80% of the blend stayed in full stainless-steel tanks, which contain premium French oak staves. After 8 months, the 2 components were blended together, cold stabilised and filtered, ready for bottling. The individual components are tasted, and a blend is determined. Once blended, 20% of the wine will go into barrels for 8 months. The barrels used are all 2-year-old American Hogsheads. The remaining 80% of the blend stays in full stainless-steel tanks which has premium French oak staves in it. After 8 months, the 2 components are blended together, cold stabilised and filtered ready for bottling. Once wine was dry in oak and tank, each parcel was racked off gross lees back to same oak\/vessels and allowed to go through malolactic fermentation.
