It begins with sophisticated floral fragrances of violets and blackberries, while showcasing an elegant mediumweight palate that features ripe blackberry fruit, earthiness and subtle tannins.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThis Pinot Noir is planted on the Southern section of our vineyard, which has the highest elevation, providing extra warmth and less exposure to frost. In addition, our vines are closely planted to reduce vigor, resulting in lower crop levels and allowing us to ripen these grapes to achieve a true expression of this variety. We hand tend all our Pinot Noir throughout the season and at harvest. This mix of Pinot Noir clones were specifically chosen for their flavor profile with 50% of the vineyard planted in Burgundy clones. Clone 667 fills out the middle palate, while 777 provides a long finish. The rest of the vines are a mixture of eleven other clones, including UCD 5, UCD 6, 114, 115, Mariafeld, AM10, 4, 5, 943 and Abel. The aim of these selections is to build sound palate structure in the wine, providing a vibrant ruby colored wine with ripe fruit, subtle tannins, great length and persistence of flavor.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2017 was an interesting vintage for Pinot Noir. A very hot start to the season led to great shoot growth and bunch formation. Towards the end of the season the weather cooled significantly, and we experienced rain events at tricky times. This led to a slower ripening period, which was great for acid retention, but touchy for sugar levels. Picking started on the 31st of March and finished on the 18th of April; nine days later then 2016. The fruit was 100% handpicked, bunch sorted and destemmed. The Pinot Noir then went through a cold soak for five days, then a fast and hot fermentation followed by an extended period of post ferment maceration. A combination of very gentle pumping over and plunging was used. All our Pinot Noir blocks were fermented separately in varying sized vessels which helped preserve each block’s individuality and unique character. The hot fermentation and gentle handling give us the soft subtle tannins in this wine. Once the tannins have integrated to our liking, the skins are gently pressed, keeping the free run and pressings separate. Our 2017 Mt. Beautiful Pinot Noir was barrel aged for 10 months in a combination of 20% new and used French oak barrels. Malolactic fermentation occurred in barrel before being racked and lightly fined with egg whites. It was picked on April 4th with low sugar levels and good acidity to retain crispness and vibrancy. The fruit was then destemmed and macerated for 24 hours to fix its color, followed by being fermented in tank and barrel. This Pinot Noir component gives the wine delicate and soft floral and berry notes. The Pinot Gris portion (30%) was pressed directly to tank, then settled for 24 hours before the relatively clear juice was racked and fermented in stainless steel. This adds a more robust yet subtle, savory quality to the wine. Twelve percent of the total blend was barrel fermented, bringing more texture and a creamy mouth feel. Fermentation lasted between 14 and 18 days at a closely monitored average temperature of 16 degrees Celsius. Mt. Beautiful winemakers aimed for a long fermentation to allow for clean, complex flavors to be exhibited.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tFood Pairing: The Mt. Medium bodied with underlying notes of roasted almonds and nectarine confit, it finishes clean and crisp with a lovely persistent flint like minerality.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2016 was the best vintage yet of the Mt Beautiful Chardonnay. The fruit for this wine was hand picked in three different batches according to ripeness. It was then gently whole bunch pressed, resulting in beautifully clear and delicate juice which is ideal for barrel and tank fermentation alike. The barrel portion was reserved for the wines with the best depth of fruit and ripeness of flavour, and was fermented in 300 litre hogshead casks (both new and one to two years’ old). The barrel fermented wine went through a partial malolactic fermentation. Both tank and barrel batches were aged for 10 months on yeast lees prior to blending in February. They were then lightly fined and filtered prior to bottling.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThis Chardonnay is planted on the most Northern part of the vineyard and is hand tended and hand harvested. The clones are a mixture of French clones B 95 and 2\/23 grafted onto rootstock. A small portion (2.5%) went to barrel and the remainder went into stainless steel tanks to ferment. A number of yeast strains were used which helped diversify the flavor profile. The wine spent eight months aging on lees, giving it a great creamy texture. It was then blended and bottled on January 31, 2018.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe majority of the Sauvignon Blanc is planted on the most northern part of the vineyard which is cooler and more suited to this variety. All of the Mt Beautiful Sauvignon Blanc is hand-thinned and machine harvested before it is pressed into juice on site. The planted clones are a mix of University of California Davis (UCD) 1 and Mass selection (MS) on a mix of 101-14, 3309 and Schwarzmann rootstock, with a quarter of the vines Bordeaux clones BDX 316 and BDX 317, on Riparia Gloire rootstock. The Bordeaux clones tend to give a definite lift to Sauvignon Blanc flavors, with less cut grass and more tropical flavors providing a more artisan style, balanced, elegant wine which compliments a range of foods.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tFood Pairing: Pair Mt. This has the highest elevation and provides extra warmth and less frost risk. In addition to this our Pinot Noir is closely planted to reduce vigor resulting in lower crop levels of around 45hl\/ha, allowing us to get physiologically ripe fruit and give a true expression of this variety. Our Pinot Noir is all hand tended throughout the season and at harvest. Our mix of Pinot Noir clones were specifically chosen for their flavor profile with 50% of the vineyard planted in Burgundy clones. The parcel selected for Rosé production largely consists of Clone 5 and the Swiss clone Mariafeld. Both have slightly bigger berries and thinner skins. The Pinot Gris is located on a similar hillside face as the Pinot Noir. It consists of Pinot Gris clones Berrysmith, Orvaille and GN 2-21. It is important that the two Pinots are fermented together as they have complimentary roles and some of the phenolics found in Pinot Gris skins help fix color and aromatics in the Pinot Noir.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tFood Pairing: The Mt. There is also a hint of struck match, adding complexity and a flinty minerality. The wine has satisfying concentration on the palate, however remains elegant and focussed, with refreshing acidity and a lingering finish.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tSettled weather in North Canterbury during December provided optimal conditions for flowering. A very hot summer then enabled the fruit to ripen beautifully. The free draining stony soil helped mitigate the effects of some late summer rain, and the ensuing dry autumn meant the fruit was harvested in excellent condition.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tTraditional Burgundian winemaking methods are used. The fruit was handpicked in stages during early April and then the whole bunches gently pressed. The non-clarified juice was then put into large French oak barriques, where it underwent primary fermentation by the grapes’ natural yeasts. The wine was then matured in these barriques on its own yeast lees (sur lie). In the summer after harvest, it started to go through spontaneous secondary (malolactic) fermentation. It was regularly tasted during this time and the fermentation was stopped when the ideal balance was obtained. It had approximately 12 months maturation prior to bottling.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tMain Divide is the local name for the Southern Alps and is the backbone of the South Island, where grapes for Main Divide are exclusively sourced. Inclement weather lead to some of the fruit being picked earlier than preferred, however, fruit harvested later on was some of the best Chardonnay Mt. Beautiful’s estate has ever produced. Picking commenced on the 7th of April and finished on the 28th. All of our Chardonnay was handpicked in different batches depending on levels of ripeness. It was then gently whole bunch pressed which resulted in delicate fruit-driven aromas and good palate weight, while minimizing the extraction of undesirable phenolics. Once pressed, the juice settled for 24 hours before the clear juice was put (50\/50 split) into tank and barrel (new and neutral oak) for fermentation. The barrel portion underwent partial malolactic fermentation. The aim of these selections is to build sound palate structure in the wine, providing a vibrant ruby colored wine with ripe fruit, subtle tannins, great length and persistence of flavour.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2018 was a complete contrast to the previous few vintages. The growing season was considerably warmer and wetter than normal, and our Pinot Noir did very well. Good flowering followed by enough rain to fill out the grape bunches had us hand harvesting our fruit 10 days earlier than usual, starting the 21st of March. Fruit ripened fast and was picked with excellent sugar levels and good acidity however we had some variability in tannin ripeness. The harvest was 100% destemmed and whole berries were sent to open fermenters. After a cold soak of 5-10 days, a fast fermentation ensued. The wine was gently plunged twice daily and left on skins for a further period. Some cuvees were pressed quickly to retain freshness and fruitiness, whilst others that had better tannin structure were left on skins for an extended period. The wine was fermented for about 10 days at 160 Centigrade and then aged on lees for a further 3 months prior to racking a clarifying. The lees ageing helps add more complexity texture and mouthfeel to the wine. The wine was bottled in August 2020 to retain maximum freshness and fruitiness.\u003c\/p\u003e\n\u003cp\u003eThe Pinot Noir is planted on the Southern section of the vineyard . This has the highest elevation and provides extra warmth and less frost risk. In addition to this our Pinot Noir is closely planted to reduce vigor resulting in lower crop levels of around 45hl\/ha, allowing us to get physiologically ripe fruit and give a true expression of this variety. Our Pinot Noir is all hand tended throughout the season and at harvest. This led to a very good growing season; good flowering, nice even bunches and early ripening. Picking commenced on the 26th March and finished on the 7th April, about 10 days earlier than 2017.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tAll of their Chardonnay was handpicked in different batches depending on levels of ripeness. It was then gently whole bunch pressed which resulted in delicate fruit-driven aromas and good palate weight, while minimizing the extraction of undesirable phenolics. Once pressed, the juice settled for 12-24 hours before the clear juice was put (50\/50 split) into tank and barrel (new and neutral oak) for fermentation. About half of the barrels went through the malolactic fermentation to soften the acid balance and broaden the palate. Both barrel and tank components were aged on lees for 10 months, adding textural elements to the wine. The aim of these selections is to build sound palate structure in the wine, providing a vibrant ruby colored wine with ripe fruit, subtle tannins, great length and persistence of flavour.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2019 was a good growing season that was considerably warmer than normal. Pinot Noir though was quite diffcult as it had poor flowering and consequently very low yields. Harvest started on 28th March and Pinot noir was finished on 5th April. Fruit was ripening, had good sugar levels, and acidity was higher than normal. There was some variability in tannin ripeness. Consequently the harvest was 100% destemmed to open fermenters. After a cold soak of 5 -10 days a fast fermentation ensued. All the time being treated very gently with careful plunging twice daily. The wines were then left on skins for a further period, some cuvees pressed quickly to retain freshness and fruitiness whilst others that had better tannin structure and were left on skins for an extended period. Medium bodied with ripe nectarine like fruit, underlying notes of roasted almonds cashew nuts and cinnamon quills ending with a clean and crisp finish and a lovely persistent minerality and savoury toastiness.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tOur Chardonnay is planted on the most Northern part of the vineyard and is hand-tended and hand-harvested. The clones are a mixture of French clones B95, 548, UCD15 and UCD1 grafted onto different rootstocks. The vineyard is in charge of dictating the flavor profile of the Chardonnay, so far yielding flavors of peachy stone fruits and creamy almonds. The first vintage was 2013.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2019 was a good growing season overall. It was warm with adequate moisture. This lead to a very good growing season and good flowering , nice even bunches and early ripening. Picking commenced a few days later than 2018 on the 29th March and finished on the 9th April. Harvest of the last part of Chardonnay was delayed due to higher crop yields and a cold spell. All of our Chardonnay was handpicked in different batches depending on levels of ripeness which was just as well as the later picks needed a good deal or sorting because of diseases pressure. TheFruit was then gently whole bunch pressed which resulted in delicate fruit-driven aromas and good palate weight, while minimizing the extraction of undesirable phenolics. Once pressed, the juice settled 36 hours before the clear juice was put (50\/50 split) into tank and barrel (new and neutral oak) for fermentation. About half of the barrels went through the malolactic fermentation to soften the acid balance and broaden the palate. Pinot Noir had excellent flowering and consequently very good yields. Flowering was short and sweet leading to even bunch formation. The summer progressed well with adequate moisture warm days and relatively cool nights. Veraison was in the middle of February and lead through to an early harvest commencing on 20th March.\u003c\/p\u003e\n\u003cp\u003eFruit had good sugar levels, and acidity and even tannin ripeness. The majority of cuves were hand harvested, 100% destemmed to open fermenters. One batch making up 14% of the blend was fermented with about 20% whole bunches. The wines were then left on skins for a further period, some cuvees pressed quickly to retain freshness and fruitiness whilst others that had better tannin structure were left on skins for an extended period. Post cold settling, the Pinot Noir and Pinot Gris were blended and co-fermented together giving a blend of 89% Pinot Noir and 11% Pinot Gris. The Bordeaux clones tend to give a definite lift to Sauvignon Blanc flavors, with less cut grass and more tropical flavors providing a more artisan style, balanced, elegant wine which complements a range of foods.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe 2020 growing season started off with excellent spring and very good early flowering in December with unusually warm temperatures. This was followed by a long dry summer. Harvest started 24th March and went through 9th April. Grapes from these lower yielding sites give the wine a more concentrated flavor profile. The wine was mostly fermented cool with long slow fermentations to retain aroma and fruitiness. A hot and dry early summer provided a good fruit set resulting in strong yields. This enabled the fruit to ripen, acidity to drop and be picked with optimum flavour. The Sauvignon Blanc harvest started on the 17th April in F Block with Q Block being the last on 23 April. The spread of picking dates enabled a range of flavours within the Sauvignon Blanc from ripe tropical fruits to more herbaceous green herbs. The picking period was driven partially by yield and fruit condition but also because of the many different block locations and aspects on the vineyard which provide a nice array of variables and options at blending. The majority of the wine was fermented cool with a long slow fermentation to retain fruit aroma. The tank fermented wines were racked off gross lees approximately 10-20 days post fermentation while 5% of the wine was fermented in old barrels and left on lees for 2 months to provide texture. The Black Label was blended in June and bottled in early August.\u003c\/p\u003e\n\u003cp\u003eThe majority of the Sauvignon Blanc is planted on the most northern part of the vineyard which is cooler and more suited to this variety. All our Sauvignon Blanc is hand-thinned where required, machine harvested and processed at the Mt Beautiful winery on site. The planted clones are a mix of University of Davis (UCD) 1, Mass Select (MS) on a mix of 101-14, 3309 and Schwarzmann rootstock along with Bordeaux clones 316 and 317 on Riparia Gloire rootstock. The MS clone is what much of the New Zealand industry is planted with providing a medley of fruit flavours with a lot of intensity, drive and acidity while the Bordeaux clones tend to be more tropical, softer in acidity providing a nice fullness and richness to the blends. The Pinot Noir is closely planted to reduce vigour and enable lower per vine yields enabling the fruit to achieve the physiological ripeness we were looking for in our Rosé. The Pinot Noir blocks were chosen based on three of Mt Beautiful’s oldest (Block M, N and X) that are planted with a mixture of clones (115, 5, 6, Mariafeld, Abel) and combined with one of our young vine blocks planted with 115, 667, 5, Abel, 10\/5, 777, 943. What this offers in the Rosé is a wonderful medley of clones and a true vineyard blend. Each clone offers something different – fruit flavour, spiciness, savoury notes and acidity. The Pinot Gris planted on a North facing slope consists of the Berrysmith, Orvaille and GN 2-21 clones giving slight differences in their flavour profiles and were harvested at the same time as the Pinot Noir as the key to this blend is the co-fermentation of both varieties providing complementary roles of aromatics and phenolic mouthfeel to the wine.\u003c\/p\u003e\n\u003cp\u003e2023 was a favorable vintage for North Canterbury, not dissimilar to the 2022 vintage where the region had to negotiate some rain events early season. Vintage itself was relatively straight forward with a few rain days interspersed with fine warm days. Veraison was unusually long given a cool damp period from the end of January to mid-February. Expectation was for an earlier vintage but the slightly cooler lead in provided an extended ripening period and pushed out harvest by 10 days. This enabled the fruit to fully ripen and be picked with optimum flavour. The aim of our 2023 Rosé is to align with the colour profile of the Provence style Rosé – that being a light coral pink. To achieve this, both the Pinot Noir and Pinot Gris were drained immediately upon arrival at the winery. Half of the juice was lightly pressed with the balance being free run juice only. Inoculated with an aromatic yeast and fermented at a steady 120C, the Rosé was fermented to dryness then aged on its lees for a further 4 weeks to build texture and mouthfeel. This was followed by a cooler than average summer which delayed ripening. Fortunately, a warm dry autumn allowed the grapes to be left on the vines till later in the season, where they were able to achieve the desired level of ripeness.\u003c\/p\u003e\n\u003cp\u003eTraditional Burgundian winemaking methods were used to make this wine. We picked the various blocks at different stages, depending on their maturity, aiming for a range of red and dark fruit flavours. Approximately 40% of the grapes were put at the bottom of the fermentation vats as whole bunches, with the balance being destemmed on top, retaining as many whole berries as possible. The vats were kept cool over the next few days to help extract the soft, silky tannins from the pinot noir skins. After approximately a week, the must started to ferment naturally. During fermentation the skins of the grapes were gently plunged twice daily. When the fermentation finished, the grape remnants were left to steep in the wine for up to a week to help extract a different range of tannins that add structure and depth. The exact duration of this period was determined by daily tasting. Subsequently the wine was gently pressed off and put into oak barriques (approx. 20% new), from selected artisan Burgundian coopers.
