For the second year in a row, we underwent MLF due to high acidity at harvest.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\t2017 was a cooler and later vintage than the previous 10 years; a year of elegant, perhaps slightly lighter bodied wines, though ripe in flavour, vibrant and very perfumed. Higher than average yields in combination with a cooler season contributed to delayed ripening of the fruit and good acid retention. Some timely warmth and sunshine occurred throughout January, although February temperatures remained moderate with some rainfall. With the cooler weather, canopy management and fruit thinning was imperative to mitigate disease pressures and allow for even, persistent ripening. The grapes were chilled and softly pressed to liberate the juice, with the pressings added back to the free-run juice to achieve our style. The cloudy juice was then fermented in a combination of new and used French oak barrels and tank using a combination of wild fermentations and a selected yeast used to produce savoury characters. 80% of the wine then went through malo-lactic fermentation followed by maturation on yeast lees with stirring of the lees done fortnightly to impart texture, balance, integration and complexity to the final wine. Harvest commenced late,at the end of February, with abundant M whites were harvested. March was relatively wet with a significant rain event after most of the white fruit had been picked. The mild spring which followed ensured that there was good flowering and fruit set. A moderate start to summer, with no heat extremes, set up the harvest well with white varieties offering great flavour intensity and bright acidity. There was an incredible display of Marri blossom (tagged as a once in a generation ‘mega-blossom’) which meant bird pressure was practically non-existent whilst the whites were harvested. A minor rain event occurred in mid-March, which was followed by fine warm conditions which prevailed right through to middle of April allowing all red varieties to achieve great flavour and tannin ripeness. In summary 2018 will be remembered as an outstanding vintage!\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tAll components (the majority being Gingin clone Chardonnay) were pressed without crushing, retaining relatively high solids in the juice after settling overnight. 80% of the blend was fermented in seasonal French oak barriques (only 5% new oak in the final blend), with the remaining 20% tank fermented using aromatic yeast strains before being run down to barrel post fermentation. Wild fermentaion was encouraged on barrel fermented components, in order to introduce complexity and personality into the wine. All of the individual barrel fermented batches which make up the blend were lees stirred throughout a nine-month oak maturation period, without any malolactic fermentation; gaining texture throughout the year. With April normally the change in season, there were many hours spent watching the weather forecast, waiting for the rain to start. Unbelievably Mother Nature was on our side, April was one of the driest on record. The latest season ever for the winemaking team, with the last of the Cabernet harvested in early May. The wines produced this season are elegant, showing more flavour complexity and concentration.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tPicked in late April to early May, these Shiraz grapes were crushed before being inoculated with selected yeast strains and fermented in open fermenters. The must was mixed by pumping over, twice daily to keep the skins and juice in constant contact. Based on taste, the fermenting must was pressed once the perfect balance of colour, flavour and tannin extraction was reached. After the completion of primary ferment, the wine was inoculated for Malolactic Fermentation (MLF), before being transferred to 100% French oak barrels. Warm conditions continued throughout March, with all the reds being harvested by the first week of April, our earliest ever harvest completion. In summary, 2020 will be remembered as an excellent vintage in Margaret River.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tAll components were pressed without crushing or the use of enzymes, retaining relatively high solids in the juice after settling for 48 hours. 70% of the blend was fermented in predominantly seasoned French oak barriques (only 6% new oak in final blend. It certainly beats all of the last 10 vintages I’ve seen at Sandalford. Overall, the growing season, from Spring through to Autumn was much cooler than average. There were no heat extremes. This delayed ripening of all varieties by at least 3-4 weeks compared to normal. At the start of April, all of the red grapes were still on the vine, several blocks needing a good 4-5 weeks to fully ripen. With April normally the change in season, there were many hours spent watching the weather forecast, waiting for the rain to start. Unbelievably Mother Nature was on our side, April was one of the driest on record. Our latest season ever, with the last of the Cabernet harvested in early May. The wines produced this season are elegant, showing more flavour complexity and concentration.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe grapes for this wine are exclusively from our 40+ year old Wilyabrup Estate Vineyard in Margaret River. Harvest commenced late, at the end of February, with abundant Marri blossom keeping bird pressure very low whilst the whites were harvested. March was relatively wet with a significant rain event after most of the white fruit had been picked. Fortunately, the April that followed was glorious (the driest April since 1982 in fact) with fine weather and no heat extremes experienced at all. The extended ripening period allowing the reds to attain full physiological maturity and tannin ripeness with a wonderful sense of finesse. A cool and wet spring prompted the need for an intense leaf plucking program to mitigate disease risk. Luckily, December and January were warm and dry. Canopy management was a priority throughout February and March to combat unusually warm and moist conditions. A rainfall event in early February provided a timely drink for the red varietals, followed by warm weather which was ideal for the Chardonnay to achieve ripeness. A second rainfall incident in early March was followed by sunny and breezy conditions to dry off the fruit for healthy ripening. With our judicious canopy management and a crop of naturally resilient grapes, we are pleased to say that fantastic quality fruit was ripened and harvested with little-to-no disease in our vineyards.\u003c\/p\u003e\n\u003cp\u003eThe individual batches were destemmed and sent as whole berries to stainless steel rotating and static fermenters for wild fermentation. The fruit experienced a few days of gentle soak before the ferment began. Open top and use of aeration during fermentation helped to promote a clean fruit perfume, soften the tannins and bring life to the wine. The resulting wine was pressed off to fine French oak for 10 months maturation prior to blending. After crushing and destemming the must was inoculated with a selected yeast isolate for fermenters. At the completion of fermentatio, the wine was pressed to tank and inoculated for malolactic fermentation. At the completion of MLF, the wine was racked and transferred to French oak barrels (25% new) for 13months maturation. With no diseas pressure, all grapes were harvested with a good balance of sugar, flavour and tannin ripeness. The resulting red wines are elegant in style displaying wonderful varietal characters.\u003c\/p\u003e\n\u003cp\u003eMachine picked in mid-April 2019, these Shiraz grapes here destemmed to small 5 tonne open fermenters before being inoculated with a selected yeast isolate. The fermenting must was pumped over twice daily to extract flavour, colour and tannin. Once the right amount of extraction was achieved, the ferment must was then pressed to tank to complete primary ferment. The wine was inoculated for Malolactic Fermentaion (MLF), before being transferred to 100% French oak barriques (30% new) for maturation. Chardonnay was the first variety to burst in the last week of August, followed by the Riesling and Cabernet through late August and September. Chardonnay cap fall was mostly complete by November 10. Summer was warm with few hot days experienced. Veraison was first noted in the estate Pinot Noir vineyards during the final days of December, while Chardonnay veraison commenced in the first week of January. Bird nets went onto the vineyards through early January, although a substantial and prolonged show of Marri blossom in the region kept the birds out of the vineyards until March when its flowering was complete. Rain in April, alongside sunny mild days and cool nights allowed the reds to develop beautiful ripe skin tannins, flavour and sugar ripeness. Harvest of the Cabernet Sauvignon and Shiraz began in the final days of March, with the last of the estate fruit picked on April 18.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tSelected shiraz parcels were individually berry sorted and fermented in closed and open fermenters after cold soaking, then plunged and pumped over daily. In summary 2021 was a more challenging season than usual, however the extra work in the vineyard ultimately paid dividends with some wonderfully elegant wines being produced as a result. 100% of the fruit for this Reserve Chardonnay is from our oldest Chardonnay vineyard, the Lagan Estate. The low yielding vineyard produces bunches with characteristic ‘hen and chicken’ architecture typical of the Gingin clone. We encourage natural fermentation on fruit from this vineyard to further emphasize the personality of this wonderful site which is directly adjacent to the winery.\u003c\/p\u003e\n\u003cp\u003eAll of the fruit was hand-picked and whole bunch pressed followed by 100% barrel fermentation in select French oak (28% new oak).
