The fruit for our SV Pinot Gris all came from this first day of picking, when the grapes were most balanced with flavour and acidity. The juice was fermented in 90% stainless steel, with one select seasoned barrel being chosen to add a spice complexity. The wine was left on lees for 5 months, stirring each week to promote autolysis.
