These tannins are largely obscured by the weight and richness of glycerol and alcohol. Malo-lactic fermentation was completed in barrel and the wine left to age on full lees. This year we also used a small portion of Clone 95 from terrace one which gives a lovely textural element to the wine. Apart from the amazing vineyards and wines, what struck me was the sense of tradition, community and the pursuit of small improvements in all aspects of their production. To add extra interest and complexity to the Stoned Crow Syrah winemakers included 5% of whole bunches in our small fermenting vats. The fermentation was carried out by natural yeast and after carefully monitored post ferment maceration; the new wine was run off to small French barrels. Some late rains alleviated the drought pressure brought about by the hot summer. The 2017 Chardonnay was sourced from a range of Hawke’s Bay vineyards which are characterised by moderate temperatures and free draining soils, perfect for producing high quality fruit.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe fruit was gently picked and pressed to give fine fresh juices with a soft texture. The batches were kept separate and fermented with a range of vessels, temperatures and yeast strains to give complexity of aroma and mouth feel. The wine is harmonious, showing balance and softness.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThis Merlot was selected from two blocks on Mission Estates vineyards on the Gimblett Gravels. 86% was Merlot off our Mere road vineyard, 13% Cabernet Franc and 1% Cabernet Sauvignon off our Gimblett Road block. Extensive shoot thinning was applied to the vines before flowering, then bunch thinning around veraison. This ensured light crops of mature ripe fruit. Mere Road is less stony than Gimblett and more suited to the more fleshy Merlot variety. Gimblett is ideal for Cabernet and Cabernet Franc; being very free draining which reduces the vigour of the Cabernet vines – perfect for ripe cassis and black current aromas. Merlot clone is 181, Cabernet LC10 and Cabernet franc the superior 678 clone giving superior, well balanced vines with beautiful floral aromas.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe fermentations were managed with minimal pump overs to avoid over-extracting the grapes. When the fermentations were complete there followed a period of post fermentation maceration to develop the mouth feel of the young wines. After pressing the wines underwent MLF in tank before transfer to French oak barrels for maturation.
