A feature\u003cbr\u003e\r\n\tof the vintage is the fine tannin structure that has resulted in a soft, generous Pinot Noir.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tTo make this wine, fruit from Pinot Noir clones 114, 115, 5, 667, 777 and Abel was hand harvested and de-stemmed without crushing to allow a portion of\u003cbr\u003e\r\n\twhole berries in the ferment. A small amount of whole bunch fruit was also included in some ferments (average 10% whole bunch). The grapes were fermented with indigenous yeast in open top fermenters after a 6-8 day ‘cold soak’. Careful cap management, using our pneumatic punch down device, has resulted in extraction of only the soft ripe tannins. After pressing the wine was racked directly to a mixture of new and older French oak Barriques, where it remained undisturbed until filtration and bottling in March 2016. The vines got away to a reasonably slow start. December was warm and remarkably settled leading to a compact and successful flowering. The warm settled spell continued right through Januar February arrived and whilst warm was unusually damp, with much higher than average rainfall. March dried the vineyards out and the season finished with a warm flourish in April. We again started harvesting with lower sugars than typical at nice ripe flavours. Harvest started on the 14th March with Pinot Noir, achieving perfect ripeness at slightly lower sugars than previous years. In late March, northerly airstreams brought a couple of minor rain events which necessitated additional canopy and crop management in some vineyards. Cool weather continued through January and February and careful attention in the vineyard was needed to ensure picking occurred at peak flavour ripeness.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tPicked late at night to harvest the grapes as cold as possible the grapes were transported to the winery and pressed using modern membrane tank presses.
