This origin gives citrus and yellow fruits’ aromas and fine structure to the crémant d’Alsace brut. The grapes are pressed whole (without having been crushed or destemmed before). The juice starts then its first fermentation in casks. This wine spent a short amount of time (6 months) in old French oak before it was blended together, and finished maturing in stainless steel. The palate is fresh and crisp with a layer of bright red fruits that draws the wine across the palate, makes you salivate and leaves you wanting more. The tannins are fine and elegant, and the acidity gives this wine a lot of precision on the palate.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tGrown on Whistlers Heysen Estate Vineyard using organic practices, this Grenache was planted in 2001 using the clone BVRC139. The west-facing slope has quite a bit of ironstone at the top of the hill, with deeper red clay and biscay soil towards the bottom, giving the fruit great complexity within the 2,359 vines.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tPicked over two dates, the 18th of March and the 11th of April 2017, this was the latest that the winemaker has harvested Grenache since the first vintage of this wine in 2014. 2017 was the coolest and wettest vintage since 2011, and the resulting wine is the lightest and most elegant of all as a result. A small portion of whole bunch (7%) was used to give this delicate vintage some crunch on the palate, and some spice and lift on the nose. The remainder of the fruit was gently destemmed out in the vineyard and fermented as whole berries to give a nice carbonic maceration juiciness to the wine. The wild ferment was foot stomped twice a day in old concrete fermenters for 15 days before gentle basket pressing. The new planting completed in 2011 has 2.0ha planted at 6177 vine\/ha with 115, 667, 828, 943, Abel, and UCD5 clones. Organic and biodynamic farming practices have been used since 2010. Home Vineyard became fully certified organic with BioGro in March 2017.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tdry mild winter meant a continuation of the drought in the North Canterbury region. However a mild spring allowed good early spring growth and small but regular rainfalls prevented vine stress in the first half of the season. January’s New Year brought more intensity to the season with high winds and very dry conditions. Vine growth was restricted and our vineyard team worked hard to limit stress on the vine canopy. Humid weather returned in early March meaning we had to ensure ripening bunches had maximum exposure to light and ventilation to reduce the potential for crop loss to botrytis. Fruit thinning continued right up to harvest further reducing crop levels. Considerate picking decisions and careful hand sorting was required to work between rain showers and ensure only the ripest and cleanest fruit was selected. This Pinot Noir is grown on a 5.5 hectare vineyard with 9 different parcels of various northeast, north, and north-west facing slopes, with an altitude between 140 to 180 meters above sea level. The vines here were planted in 2000 and grow on clay overlying fractured limestone and sandstone soils. Organic and biodynamic farming practices have been used since 2012. The Damsteep Vineyard has been fully certified organic with BioGro since March 2017.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tWinter and early spring rainfalls and moderate temperatures meant vines grew evenly though out our vineyards from around the spring equinox in late September. Frost incidence was moderate keeping us watchful in October and November with the majority of our vineyards avoiding frost damage. Rapid vegetative growth kept our vineyard team busy with shoot thinning, cultivation, and organic spray rounds with short intervals. Weather at flowering was favourable for Pinot Noir. Warm dry conditions in January and February slowed vegetative growth and ripened fruit. Settled conditions in March allowed an early start to harvest where hand harvested fruit was ripe and clean with low disease pressure and optimal ripeness. Mid way through harvest we closed our restaurant and the entire Black Estate team was able to work together to ensure our harvest was completed successfully. There is an expanse of red, blue and black fruits set with a fine but notable profile of natural tannin adding structure and a graceful oak presence giving further depth and complexity. The finish is long and completes a polished wine. Moppa 2020 is an expressive Shiraz that can be enjoyed now or will cellar well in the medium to long term.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tMoppa is predominantly Shiraz with a trace of Petit Verdot (5%) and Viognier (2%) blended in for added complexity. Grapes are from nine different blocks on the Kalleske’s organic farm, with the oldest of these blocks planted in 1961. The vines are low-yielding and are grown in shallow, sandy loam soil over superb deep red clay, providing ideal conditions for these varieties.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tVintage 2020 has delivered wines of amazing quality. However, quantity is very limited, with it being one of the lowest grape yields ever in the Barossa at around 50% of average. Yields were dire due to a combination of early mild frost conditions, then a notably windy period (45% windier) around flowering leading to poor set (not many berries) followed by some hot days in November and an overall dry growing season (34% down). Notably, quality is of the highest echelon with rich colours and intense robust flavours.\u003c\/p\u003e\r\n\u003cp\u003e\r\n\tThe Shiraz was harvested in numerous batches from February 27th to March 17th. One lot of Shiraz was co-fermented on the skins of Viognier which had been harvested on February 27th. The Petit Verdot is a late ripener and was harvested on March 31st. All batches were wild fermented in open top fermenters with hand pumpovers twice a day during fermentation. After 7 to 14 days on skins the fermented grapes were traditionally pressed. The juice is collected together and allowed to settle for only a short time as we wish to keep the fine sediments, for it is here that all the nutrients lie which satisfy a well behaved fermentation. The soil type is complex clay loam over river derived silts giving wines of aroma and texture. The grapes were hand harvested and pressed directly to small French Oak barrels. 10% of these barrels were new. Fermentation starts naturally and continues for 3 weeks rising in temperature to about 23C. Some barrels have a secondary malolactic fermentation to soften the palate and increase texture.
