"The bouquet offers lovely ripe aromas of yellow peach, poached pear, jasmine and spice on the nose. The palate is succulent and rounded, and displays attractive fruit intensity and silky texture, leading to a lingering refreshing finish. After cool early morning harvest the fruit from three premium vineyards were gently pressed to create six unique parcels. Fermented cool with selected aromatic yeast strains to retain varietal intensity and character. 5% of blend was matured in French oak puncheons and stirred to create a rich, textural component. Residual Sugar: 10.3 g/L

Food Pairing: Pinot Gris is a really useful match, pairing with everything anywhere and Waimea's 2017 vintage is no exception. Standing up against even the spiciest of cuisines.

Three vineyards feature in this wine, all planted on the stony plains but all offering their own nuances. The three parcels were picked early on the days harvest schedule. Two were inoculated with an Austrian yeast strain chosen for its ability to enhance varietal characters, in particular the peppery-spicy note typical of Grüner Veltliner. The third juice was inoculated with yeast chosen for the fruit focus it offers. Residual sugar: 3.3 g/L

Food Pairing: Appearing scrumptiously dry and savoury this is an excellent and versatile food wine - experiment and enjoy!

Two parcels were harvested from Waimea's Hunter and Annabrook vineyards, both of which are on the stony Waimea Plains. The juices were inoculated with a German yeast strain chosen for its ability to enhance and maintain the purity of fruit characters in Riesling. The ensuing cool ferments were arrested when a moreish level of sugar still remained but was well balanced by the acidity. Residual Sugar: 12.5 g/L

Food Pairing: A congenial lunchtime wine, stimulating aperitif or lively dinner companion - try with sticky pork ribs.
