"Bright, very pale straw colour, near colourless on the edge. The nose is softly fresh with restrained aromas of white stonefruits and pears, along with subtle notes of exotic white florals and pears with suggestions of honeysuckle. Dry to taste and medium-bodied, the palate has a refined and elegantly concentrated core of white stonefruits and white florals, and nuances of pears and honeysuckle. The mouthfeel is refreshing with a fine, firm line of light phenolic textures and integrated acidity. The fine flows along a taut core, leading to a dry, aromatic finish. This is a taut, refined dry Pinot Gris with a core of white stonefruits and pears with fragrant florals. This luscious, refreshing, off-dry wine is bright and clear with a pale golden hue. The bouquet had lifted aromas of melon and pear. The palate is layered with white peach and citrus flavours and finishes with a great length and richness of flavour.

The grapes were whole bunched pressed to tank and held cold for 24 hours before being racked and warmed to allow fermentation to begin. The wine was inoculated with yeast selected to enhance aromatics. The wine was fermented cool to build flavour and fermentation allowed to continue until the balance of the wine was where it was desired and was then stopped.
