A beautiful pink blush in the glass. Light red berry fruit with notes of rhubarb crumble on the nose with just a touch of sweetness on the palate. This sweetness is followed by a crisp lively finish with lingering flavours of raspberry and cream.

Established in 2001, Waipara Hils has a proud history of creating award winning wines that celebrate the South Island of New Zealand. The grapes for this wine were sourced from The Mound, Deans and Home Block vineyards in the Waipara Valley, where the soils are deep and free draining due to Glasnevin gravels. The 2017 vintage started dry and warm overall, with stable weather during flowering, which allowed the crops to set at a sensible yield. Yet, like much of the country there was some rain over harvest but luckily North Canterbury sun made enough of a presence when it was needed most, producing concentration and spice that can be expected from the Waipara Valley.

Vinification included the juice being left on the skins for 12 hours to develop flavour and colour post a cool morning harvest. Once the desired sweetness levels were reached, the ferment was cooled and stopped. The wine was then left on the lees for several weeks before removing to retain vibrancy of the fruit character. It is recommended that this wine is enjoyed in its youth slightly chilled. Residual sugar for this wine is 6.0 g/L.
