Description
"Dark, deep, purple-hued ruby-red colour, a little lighter edged and youthful in appearance. The nose is firmly concentrated with aromas of blackberries and blackcurrants, along with dark raspberries and a layer of spice and earth, revealing a little funky game note. Medium-full bodied, the palate has a firm core with flavours of blackcurrants, blackberries and dark raspberries entwined with spices and liquorice. The palate possesses good depth and presence, with the fruit supported by fine, grainy tannin extraction and soft acidity lending some vibrancy. The fruit and structure carry to an elegantly concentrated, long, sustained finish of raspberries, spice and liquorice. This is a well-concentrated Syrah/Tempranillo/Cabernet blend with blackberry, dark raspberry and blackcurrant flavours on a fine-textural palate finishing with game, spice and liquorice flavours. Match with slow-cooked red meats and casseroles over the next 5-6 years. A blend of 55% Syrah, 30% Tempranillo and 15% Cabernet Sauvignon from the ‘Lyons’ vineyard, Bridge Pa, the Syrah and Tempranillo indigenous yeast fermented with approx. 30% whole bunches, the wine aged 24 months in seasoned oak, with the Cabernet Sauvignon added after blending. 13.5% alc." Plum, blackcurrant and blackberry. There is also a mineral, sea-spray note. The palate is full bodied and rich with soft tannins and a long finish. Enjoy at room temperature.
Toño (Ton Yo) is the familiar or nickname of Antonio in the Spanish language. Toño wines are a modern take on Spanish winemaking heritage, grown in the sunny Hawke’s Bay. Wines that are fun, delicious and reflect the Hawke’s Bay lifestyle.
This blend includes 55% Syrah, 30% Tempranillo, 15% Cabernet Sauvignon. Syrah and Tempranillo grapes were hand-picked and de-stemmed into open top fermenters. Around 30% whole bunches were added back to the ferment. After a five day cold soak, the ferment was allowed to warm up and progress without the addition of cultured yeast. Once pressed, the young wine spent 24 months in used oak barrels. All barrels were blended and a small amount of Cabernet Sauvignon was blended in.
