"Bright, even, light pink colour with some depth and slight purple hues on the rim. The nose is softly presented with fresh and delicate aromas of red florals and red berry fruits, showing subtle red currant notes, and gentle mineral elements, forming a finely concentrated, but rounded core. Dry to taste and medium-bodied, the palate is bright and vigorous with aromatic flavours of red florals, redcurrants and berry fruits, and mineral nuances. The mouthfeel features crisp acidity and mouthwatering, fine-textured phenolics. The wine flows with some grip, leading to a dry, textural, thirst-quenching finish. This is a vigorous dry rosé, with floral and berry fruit flavours and thirst-quenching mineral notes on a crisp palate with dry grip. Clear bright rose petal colour in the glass. The nose is floral with a fresh red berry note. The Palate is clean on entry with nice acid balance, which is full, enhanced by notes of white-fleshed fruit.
The Grenaches are grown on clay and limestone soils mainly facing directly East, while the Cinsaults are planted on the plain in predominantly sandy soils. 100% pressed rosé. The musts under go very little racking in order to develop the wine’s volume yet maintain its freshness. Balance is the golden rule. Alcoholic fermentation takes place at low temperature for 15 days and then the wine is aged on its fine lees in stainless steel or concrete vats for 3-4 months. Ideal serving temperature is between 10-12c.
