"In the past I haven’t been very welcoming of sparkling pinot gris.  Nothing’s wowed me until now.  Winemaker Jane Cooper and her team at Matahiwi have clearly cottoned on to something because this snazzy sparkler captures the lovely nashi, quince and musky characters pinot gris is famous for, but in a lean, subtle way.  There’s a light, pillowy, marshmallow texture to the mid-palate and it’s ultra-refreshing on the finish.  A superb example" Yvonne Lorkin, April 2017

This Cuvee is sourced from Pinot Gris grapes grown on the home vineyard of this Mystery winery, as well as off the Manuka Flats west of Masterton. Free draining stony gravels are the pre-dominant soil structure in this area. The crop was kept low and well exposed to ensure even ripening and optimal flavour development.

The winemaker wanted to make an aromatic, fresh and fruity wine so the grapes were picked at night whilst they were cool and processed them quickly. A cool fermentation with an aromatic yeast followed. For the secondary fermentation, a gentle aromatic yeast was used to accentuate the vibrancy of this wine.
