Description

"Bright, pale straw-yellow colour with green hues, lighter on the rim. This has a fresh, tightly bound nose with a fine core of fresh herbs, white stonefruits and nuances of green stonefruits with white pepper suggestions. Dry to taste and light-medium bodied, the palate has a firm heart with light flavours of green herbs, white stonefruits and white pepper. The mouthfeel is thirst-quenchingly dry and the wine flows along a fine phenolic line with integrated acidity, leading to a slendr, dry, lingering finish with stonefruit and mineral nuances. This is a taut and light fruited Gruner Veltliner with white stonefruit and herb flavours on a mouthwatering, dry palate. Serve with seafood and herb-marinated white meat dishes over the next 3 years. Fermentation started in tank and finished in seasoned puncheons, to 12.0% alc. and 1.8 g/L RS. With Babich's ongoing commitment to protect the environment it was a logical progression for them to move to the next step and investigate the benefits of an organic approach to viticulture. The Headwaters Vineyard is farmed in compliance with organic standards.

The parcel of fruit was hand harvested from our certified organic block within the Headwaters Vineyard. Quickly crushed and pressed into stainless steel tanks where the juice was fermented at controlled cool temperatures to capture the intense varietal flavours. Strict organic procedures were followed at all times. The wine was bottled soon after completing fermentation. Cellering potential up to 5 years.

Food Pairing: A versatile wine that would go well with a variety of dishes, from fish to chicken to ham.
