Description
Sweetly perfumed aromas - nutty, mealy with lemon blossom and a nice cedar edge. The palate is rich and complex with a zesty citrus burst on entry and nectarine and peach on the mid palate. Savoury elements are also apparent. Nice weight and volume and just a hint of caramel on the long finish.
With Babich's ongoing commitment to protect the environment it was a logical progression for them to move to the next step and investigate the benefits of an organic approach to viticulture. The Headwaters Vineyard is farmed in compliance with organic standards. The grapes were machine harvested before ferentaition in stainless steel tank and oak barrel with wild yeast. Maturation took place over the following 8 months. This wine has cellering potential for up to 5 years.
