Very light straw in colour. Intense aromas of green capsicum, lime zest, black currant and a hint of sea salt. Rich in passionfruit, white currant, grapefruit and salty minerality. The palate has a silky texture and great length.
A warm growing season, with characteristically cool nights made 2016 an ideal vintage and allowed concentration of flavours. Low rainfall eliminated disease pressure which resulted in high quality fruit. The fruit was carefully monitored during ripening and machine harvested in the cool of the evening at maximum flavour maturity and physiological ripeness. The grapes were transported promptly to the winery where they were immediately de-stemmed and pressed to minimize skin contact. After settling, the racked juice was inoculated with a specially selected yeast strain and fermented at 12 degrees celsius to retain fruit flavour and freshness. This mystery Sauvignon Blanc is a wine of great concentration, with intense aromas of green capsicum, lime zest, black currant and a hint of sea salt. The rich palate has passionfruit, grapefruit and white currant flavours, with a salty minerality and an intense lingering finish. This wine is drinking beautifully now and will be best enjoyed over the next two to three years.
