Sam Kim, Wine Orbit
Description
"It is savoury and spicy on the nose showing dark plum, dried cherry, clove, leather and game characters with a hint of dried herb complexity. The palate is ripe and nicely weighted, and displays attractive fruit intensity and supple mouthfeel, gently framed by polished tannins, finishing delicately dry. The wine shows some bottle matured savoury notes too." Sam Kim, Wine Orbit
Bright red in colour. Medium bodied red has aromas of blueberry, plum and cherry fruit. The palate is soft, with vibrant berry fruit characters balanced by light notes of oak.
The fruit was crushed and de-stemmed, before fermentation could begin in stainless steel tanks for seven days. After malolactic fermentation was complete, a portion of the wine was transferred to older American and French oak hogsheads for maturation for 9 months before blending and bottling
