Deep cherry red in colour, this medium to full bodied wine has plenty of true Cabernet Sauvignon characteristics such as blackberries, blackcurrants, cassis and spice. The rich palate shares similar flavours to the aromas and finishes with silky soft tannins.
This Benchmark Cabernet Sauvignon was sourced from premium wine regions throughout South Australia. The 2014 vintage in South Australia, saw above average winter rainfall, followed by a dry spring. The result was low yields, but good ripeness and varietal flavours in the wines.
The fruit was crushed and de-stemmed and pressed in a combination of basket and air bag presses before fermentation commenced in stainless steel tanks for approximately seven days. After malolactic fermentation (turning malic acid into lactic acid to provide a creamy texture) was complete, a portion of the wine was transferred to older American and European oak hogsheads for maturation for around 10 months before blending and bottling.
