Description

Rich red and purple hues in appearance lead to brambly red fruits with enticing earthy and chocolate background on the nose. Whilst the palate is rich sweet fruit approach, great texture and elegant structure.

Sourced from Waipara Valley vineyard sites with deep free draining gravel soils, with the exception of the Dunnolly vineyard which is on deep rich clay soils. The fruit was de-stemmed, retaining while berries and cold soaked for five days before allowed to gradually warm, Fermentation started with a range of yeasts and ran for approximately seven days, during which the was plunged three times a day and drained and returned at least once. Some of the ferments were left on skins for an additional two-three weeks before being drained, pressed and settled. Finally the wine went to a selection of barrels and tanks for maturation and MLF.

Food Pairing: Salmon and tuna are two fresh fish favorites for pairing with Pinot Noir, and we highly recommend plank grilled salmon steaks with this Waipara Valley Pinot Noir.

A very pleasant Pinot that improves with some air time (couple of hours). Put a 1/2 bottle in the fridge overnight and it drinks very well the next day.
