The 2016 Little Beast Chardonnay has aromas of golden fleshed stone fruit, green apple and baking spice and a floral lift. The palate is deliciously juicy with a sweet ripe entry, and a clean dry finish.

Little Beast Vineyard, clone UCD 15 was planted in 2002 in the volcanic clay hilltops surrounding the Stony Batter reserve. Pruned to a single arched cane with careful shoot positioning and no leaf removal, the canopy is upright, low and porous. The fruit was picked based on acidity (10.3 g/L TA) and flavour, hand  harvested and whole bunch pressed. The resulting juice was taken directly to old French 500 litre puncheons, un-fined and cloudy for fermentation. A natural, un-inoculated fermentation began and continued to dryness with no temperature regulation giving a savoury edge to the wine. The wine remained in barrel and underwent malolactic fermentation before being settled and racked twice for an early bottling in the Spring.
