A concentrated wine from the Hawke’s Bay which is dark and dense ruby in colour with purple highlights. Coffee, vanilla and dark plum aromas fill the glass. The palate displays flavours of sweet ripe red plums, dark cherry and a hint of aromatic floral notes. A full and round palate structure is supported with silky tannins and well balanced acidity, interlaced with spicy oak and coffee.
A great food match with venison or beef steak.
Fruit for this wine was held cold for five days prior to ferment to help extract maximum flavour. It was aged in older oak until the right balance was achieved and then gently extracted and prepared to bottle.
Although this wine will cellar for at least five years from vintage date, it can also be enjoyed now while young.
