Dense ruby red. Fresh and driven by vibrant primary fruits of blood plum, mulberry and ripe cherry - notes of dusty earth and savoury spices add the stamp of the Shiraz varietal out of Western Australia. The length of the seamless soft plump, juicy fruits of ripe plum and cherry provide a great structure to the shiraz. The elegance of the wine also shows a lovely spice kick on the finish which provides an excellent length of palate.
The vineyard Blocks that grow fruit for our Shiraz, are located on warm gravelly soils that encourage ripe flavours, intense colour and fine soft tannins in the end wine – all hallmarks of our Shiraz style. The fruit was harvested to capture the array of flavours present at the various stages of ripening. Select parcels were picked cool at night and cold soaked on skins at 5°C for 4 days prior to fermentation to provide further flavour and textural character in the end wine. Once all batches commenced fermentation, over the 5-7 day fermentation period to ensure a softly textured Shiraz style. On completion of fermentation, the wine was pressed into a combination of Stainless steel and matured French oak for 8 months. Following maturation, the wine was blended and lightly fined before being filtered once and bottled.
