Harvested throughout the night to preserve the grapes natural acidity and aromatic characters. Once in the winery they recieved a slow pneumatic press cycle, cold settling and musts for 24 hours, before racking and fermentation at low temperature 14-16ºC in 100% stainless steel tanks.
