A smooth, rich palate of damask plum, black cherries and spicy laced blueberries up front draped in sweet charry oak. These primary characters provide fleshy
support through the palate where they meld with subtle traces of chocolate, mocha, rosehip, leather and tobacco leaf, all complimented by a savoury touch of meaty complexity. The finish is long and generous with the charry notes continuing through to embrace the abundant ripe, supple tannins and culminate in the soothing warmth of a pinch of black pepper.

Aromas of pungent stewed plum, blackberry pastille and crushed boysenberries, with brooding wafts of earthy blood and bone, toasty oak and a f aint hint of star anise.

Warm fermentation in static fermenters on skins for 10 – 14 days at 22˚C. Gentle pressing off skins using airbag press. Completed Malolactic fermentation
on oak as per below. Bottled to screwcap to retain freshness.

Matured for 18 months on – 45% new French oak, 30% new American oak, 15% I year old French oak and 10% 1 year old American oak.
