Description
"Moderately dark, deep ruby-red colour with slight garnet hues, lighter on the rim. The nose has soft, up-front aromas of dark-red berry fruits entwined with nuances of dark herbs and peppery elements, unfolding raspberry liqueur elements. The aromas build with depth. Medium-full bodied, the palate possesses rich, juicy flavours of dark-red berries and dark cherries intermingling with dark herbs and subtle peppery and raspberry nuances. The fruit is underlined by light, supple tannin extraction with integrated acidity, and the wine flows with a gentle freshness emerging on a finish of red fruits. This is a juicy, red berry fruited Pinot Noir with herb and peppery notes supported by fine, grained, supple tannins. Match with herb marinated poultry and pork dishes over the next 3-4 years. Rose petals and violets coupled with earthy, leathery undertones exude terrior. Soft red fruits of cherry and strawberry offer this medium bodided wine a plump fruitiness with soft fine tannins.
Well suited to a variety of light game dishes such as Roast guinea fowl or with sautéed chicken liver as a starter.
Fermented in open Stainless Steel vats on skins for 14 days. Gentle pressing off skins via airbag press. Matured in an selection of old French oak. Bottled to screwcap to retain freshness.
