Description
This wine shows brooding concentrations of plums and blackberry accompanying a white pepper and savoury finish. Ripe and generous dark forest fruits creates this opulent textured style. The palate has supple vanilla tones with a backdrop of oak showing burnt chocolate. A balanced wine of soft tannins with lifted notes of pepper and spice filling the mouth providing a smooth mellow generous finish.
Good winter rains followed by a warm growing season led to good yields of fruit. A hot beginning to the harvest period accelerated the ripening with frantic harvesting ensuring the fruit was picked with the ideal flavour spectrum. The vineyards are monitored and selected by the winemaker for their rich fruit flavours, with generous colour. Fruit is then harvested when both flavour and sugar balance were at a optimum. Fruit was cold soaked and fermented at 22 - 30°C for an average seven days. Wine spent twelve months in American oak barriques with 15% in new oak.

We are very pleased with this wine. It is an excellent Shiraz. A new wine for us-although we have always liked other de Bortoli wines - but I'm just about to get some more if there is any left.
