Dry and persistent with an element of creamy complexity. Bright, crisp fruit is the backdrop for more interesting flavours to develop over time. Earthy notes with strawberry, melon and apple strudel.
After hand-picking, the free run juice was fermented and aged in old oak for 1 year before bottling. Secondary fermentation in the bottle and lees contact for two and a half years before disgorgement.
