At first spicy and balsamic the second nose develops blackcurrant, humidor and violet flower aromas finishing on toasted oak notes.

Full bodied but mellow with velvety tannins. Ripe and floral flavours on the middle palate, liquorice and spicy flavours on the long finish.

After pick-up, the grapes are brought to the winery and cool down to 12°C for a 4-day cold pre-fermentation maceration. Fermentation at 28°C maximum on the first day and then at 25°C for the next 4 days. After fermentation, maceration last for 6 days at 25°C maxi with daily pumping over. The wine is then very softly pressed with a pneumatic press. First pressings are re-blended; only the free run juice is used in the blend. Before malolactic fermentation 45% of the wine is put in 225 litre oak barrels. For the part of the blend which is aged in oak barrels (30%), we use 70% new American Oak barrels and 30% new French oak barrels. The wine is aged for 5 months in barrels with “soutirage”. The other part of the blend (70%) is aged in stainless steel. Then we prepared a blend of the different
barrels and vats.
