A gorgeous pale gold with a green hue, the Toi Toi Reserve Sauvignon Blanc is brilliantly fruited and expressed on the nose showing mango, yellow kiwifruit, grapefruit and fresh herbs. Passionfruit, red capsicum, apple and lime all play on the palate. Fine acid supports the fruit and creates a lovely tension. Intense, concentrated, and long with a minerally, savoury finish.
Marlborough’s 2021 vintage will be remembered as one of low yields and exceptional wines. It was an incredible year for Sauvignon Blanc, with aromatic and multi-layered flavour profiles, great balance and texture. Crafted from three Marlborough vineyards, each of which bring their own expression to the wine; Brookdale Vineyard in the Southern Valley’s, Utawai Vineyard nearer to the coast and Loddon Lane Vineyard in the Upper Wairau Valley.
The goal is to bring these incredible flavours from the grape to the bottle with as little input as possible. This starts by harvesting in the cool of evening to help retain fruit purity and flavours. Each vineyard is picked progressively as it reaches optimum ripeness which provides multiple flavour profiles with which to craft this wine.
In the winery the wine is given 2-3 hrs of skin contact and then gently pressed. This helps add structure to the wine and no fining means we retain more of the grape’s natural flavours. The wine is fermented in stainless steel tanks with an array of yeasts; some to enhance aromatics and some to provide savoury notes, weight and structure.
Only the most powerful and intense wines are selected for use in the Toi Toi Reserve label. The blending process takes place over 3-5 sessions refining the wine to create the ultimate expression of Sauvignon Blanc our vineyards can produce. In 2021 the Reserve is made up from 8 parcels of wine, 7 fermented stainless steel and 1 fermented in Puncheons. The addition of barrel fermented wine adds more weight and drive along with a savoury complexity.
