Very pale salmon pink. The nose is a complex combination of red berry fruits and some of the more savour characters of Merlot. The Pinot Noir component gives the wine an aromatic lift. The palate is mid weight but with well-balanced acidity and residual sugar. There is a lovely freshness from the acidity and a touch of texture from the red grape tannins. The finish is long and rich.
All of the grapes were machine harvested early in the day and the juice pressed off quickly to minimise colour pick up. After 24 hours of settling the clear juice was fermented with neutral yeast to dryness. The wine then stayed on its yeast lees for a further nine months prior to blending and bottling.
