"After a few minutes in glass the bouquet begins to unfold revealing aromas of cashew nut and fresh yellow peach, vanilla and nutty-wood spices. There’s complexity and youthfulness, familiarity and mineral, stony soil layers. Delicious on the palate with flavours that mirror the bouquet. A taut and very youthful wine with acidity and oak tannins creating foundation and mouthfeel. Fruit flavours mirror the bouquet with citrus then stone fruit followed by mineral and cashew nut oak. The wine is rich in the mouth yet remains fresh and vibrant thanks to a fine acid backbone. These qualities, combined with tangy stone fruit/citrus flavours, integrated spicy/toasty oak and a gently drying texture, results in a delicious palate with a salivating, lingering finish. A superb wine of balance, finesse and concentration that are the hallmarks of Trinity Hill Chardonnay.
Weather conditions leading up to the 2020 harvest were typical of a classic Hawke’s Bay summer – long hot sunny days with moderate-cool nights. As Autumn arrived the season became cooler yet remained dry, providing ideal ripening conditions while preserving natural acidity.
Hand-harvested fruit was gently pressed and fermented with indigenous yeasts in 500-litre French oak puncheons, of which 60% were new. Malolactic fermentation was encouraged to soften the acidity and impart further richness. The wine spent 12 months in barrel before being blended to tank for a further seven months maturation on its yeast lees to build further texture and complexity.
