"Bright, pale salmon, even colour throughout. The nose is packed with an intense floral fragrance of rose petal, white blossom melded with freshly picked raspberries and strawberries aromas. Medium-bodied, dry-ish to taste, juicy ripe fruit aromas of strawberries, raspberries interweave an amalgam of floral, linger with a hint of raspberry sorbet. The palate is clean and refreshing; a hint of sweetness rounded the palate, along with subtle fine-textured phenolic added to the mouthfeel. This is an easy-drinking, textural rosé packed with ripe strawberries, raspberries and floral fragrance. Served as an aperitif or match with Thai beef salad over the next 2-3 years. Aromas of plum blossom and raspberry sorbet. The palate is soft and elegant with flavours of strawberry and cream hints of toffee apple finishing with a crisp acidity. This Rose is a great summertime wine, succulent and refreshing drinking from late 2021.
Grapes for this Rose were sourced from different parts of our Bridge Pa Triangle vineyards. Harvested at optimum ripeness, Merlot and a small amount of Cabernet Franc varieties were used to make this Rose. Spur pruning and excellent fruit exposure produced clean, ripe fruit with great concentration.
Destemmed grapes were transferred to a basket Press. a short period of soaking then pressing was enough to colour the juice to a pale pink. Clean juice was run off to a separate tank to ferment at cool temperatures to retain great fruit flavours and reduce phenolics. The wine was then filtered for bottling late 2021.
Food Pairing: It is best as a young wine, lightly chilled, as aperitif or with seafood white meat and salad dishes.
