The wine has an orange/pink hue reminiscent of certain sunsets. The nose has a unique, youthful brightness of spring flowers, roses, and orange blossom. The palate has a subtle, soft entry that only Pinot Noir fruit can produce. The midpalate is lush and broad, coating the cheeks with juicy fruit and hints of spicy talcum and orange rind. The finish has a lingering, mouth-watering acidity.

Hawke’s Bay lies on the East Coast of the North Island of New Zealand. The region enjoys dry summers with moderate, cool nights. This wine reflects a single vineyard Sauvignon Blanc which was grown inland on the elevated terraces of the Crownthorpe sub-region of Hawke’s Bay. This appellation enjoys long, strong sunlight hours but is slightly cooler than the coastal plains of Hawke’sBay, making it most suitable for growing Sauvignon Blanc. The 2020-21 was a warm and relatively dry season. 2021 will be remembered as one of Hawkes Bay’s greatest vintages quality-wise, though with lower yields resulting in some intense and flavourful wines.

After harvest in late March, the fruit was de-stemmed, crushed, and left on skins for less than an hour. This was to ensure a vibrant, light color. The juice was then drained with the remaining skins gently pressed. The juice was settled and fermented in stainless steel tanks using an aromatic yeast strain until it was nearly dry, leaving about 7 grams per liter of residual sugar to balance the higher acids. The wine was then cold settled and stabilized before bottling under screw-cap in early July 2021 to maintain the bright fruit and aromatics gained from the young New Zealand soils.
