Bright and pale gold in the glass. The nose displays intense aromas of peach and ripe pear, with slight notes of white blossom and honeysuckle. A bunch of fresh stone fruits on the palate, with a crisp and mineral-driven texture.
Produced under the supervision of renowned oenologist Xavier Roger. Les Peyrautins combines modern techniques to compliment the best of traditional French wine regions. The result is a perfect combination of the New and Old world.
Chardonnay is the most popular white grape in the world. With grapes sourced along an axis between Carcassonne and Béziers his Pays d'Oc wine region benefits from the Mediterranean climate and is a perfect place to style ripe, fruity yet understated Chardonnay. It provides warm, dry summers for grapes to reach a perfect maturity. To the north the Montagne Noire (Black Mountain range) brings cooler evening temperatures to retain aromatic freshness and vibrant acidity.
The 2020 harvest in the Languedoc was plentiful, early and healthy. Ripeness was consistent across-the-board and the harvest was shorter than usual. It has produced perfumed, characterful wines with a high degree of ripeness.
Gentle pneumatic pressing ensures extraction of premium juice only. Cool fermentation in stainless steel vats at 16/18°C retains fruitiness and to preserve the freshness of the wine malolactic fermentation is inhibited. The wine is aged on its fine lees during 5 months with regular stirring before bottling to add richness and complexity.
