A great expression of Merlot, a medium bodied yet full-flavoured wine with textbook varietal characters of dark berry fruit, plum and chocolate. The palate has a delicious plushness with a fine tannin structure as well as fresh acidity tying it all together. Red and black fruits are the hallmark characteristics with bay leaf and chocolate notes filling out the long finish.
Sourced from established vineyards in the cooler limestone coast of South Australia’s South East corner. The consistent daily temperatures and cooler nights combine to ensure the retention of natural acidity in the elegant fruit harvested whilst promoting long, slow flavour development.
If 2020 was all about the heat, then 2021 will be remembered as the wet season. In many parts of Australia, it was unseasonably wet in winter but not at critical mes to do damage nor impact the resultant ripeness of the grapes. A cool and dry summer meant even ripening was achieved between dry and rainy spells and the ensuing fruit quality was excellent and for once yields were up making for a bumper harvest in 2021.
Partially hand harvested before de-stemming primarily in closed fermenters with pump overs with a portion of open fermenters. All components blended post fermentation before two thirds were matured in stainless steel and one third was matured in French oak for nine months before bottling with minimal fining, filtration and sulphur addition.
The Elephant in the Room wines are proudly large in scale and expansive in flavour. Ignoring fashion and braving the scorn “wine thought police” Elephant in the Room was created to give consumers exactly what they want – full bodied and mouth-filling wines that deliver maximum pleasure. Each wine is sourced from slow-ripening cool climate vineyards in the Limestone Coast of South Australia and partially matured in French Oak before final blending and bottling by Corey Ryan.
