Deep ruby red with purple reflections in the glass. Intense and wide aromas in the nose. Good structure, soft and balanced in the mouth, sapid in the end.

Produced in the countryside around San Marzano, in the North of Salento, close to the Ionian arc. At almost 100 m above sea level, with high average temperature and little rainfall during the year. The soils are mainly composed of clay and characterized by a good presence of limestone, a reddish-brown colour and a very low depth. They are in the heart of the so-called terra rossa (red soil) land.

Harvested in the first weeks of September, before Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days in stainless steel tanks.

Food Pairing: Good with savoury first courses, red meat and game, mature cheese.
