Deep red with some youthful purple hues. Black and blue berries on the nose with dark chocolate, complex savoury notes and oak spice. Flavours of juicy black currant, liquorice and mixed herbs. Medium bodied with dusty tannins that give great structure and a tight finish.
2017 was one of the coolest vintages for many years. These slow ripening conditions were excellent for Cabernet which was not picked until mid May. Their very last block of Cabernet was actually not picked until June! The long hang time on the vine has produced an elegant Cabernet with great varietal character.
Winemaking is a game of quick wit, experience and endurance. Each year Mother Nature challenges us to a match and each year they respond; moving deftly with the lightest touch. As seasoned contenders, they know how to play the game. The resulting blend is captivating; light on it’s feet yet full of character and perfect with food.
They blended this wine with the unusual variety of Saperavi which they made for fun in 2018. The Saperavi provides rich juicy soft fruits to the mid palate, a bit like adding fruit to your pork! The wine was matured in a combination of French (60%) and American (40%) oak.
